Champagne Ayala Releases Le Blanc de Blancs 2015

Champagne Ayala, known for its taut, sleek and Chardonnay-focused style, has released its latest Blanc de Blancs from the 2015 vintage.

Ayala's cellar master, Caroline Latrive, has always confessed her love for Chardonnay – and what better way to express is than with a Blanc de Blancs – a wine made from 100% Chardonnay.

The marketing department at Ayala goes as far as saying that this wine is the "identity cuvée of the house which only makes vintage Blanc de Blancs in "great" vintages and 2015 with its abundant sunshine fitted the bill.

"2015 is one of the finest vintages of the last decade in the Champagne region," Latrive says. "The weather conditions were perfect for the development of the grapes: lots of sun and rain just before the sunny harvest. The musts obtained were of exceptional quality and very healthy. The Chardonnays from the Côte des Blancs were particularly expressive because the grapes were able to attain perfect ripeness."

The grapes came from famed grand and premier cru villages Chouilly, Cramant, Le Mesnil-sur-Oger, Cuis and Vertus. Latrives says that this resulted in "a great vintage, lively, complex and elegant, with a delicate generosity created by the fine maturity achieved and above all good cellar ageing potential."
