First Standalone Alex Dilling Restaurant to Open in London

Michelin-starred chef Alex Dilling will open his first standalone restaurant this summer in London's Hotel Café Royal. 

Alex Dilling, who has cooked with luminaries like Alain Ducasse and Hélène Darroze, was formerly the head chef at the two-Michelin starred Greenhouse restaurant in Mayfair until it closed during the Covid pandemic in 2020.

"It is with great excitement and emotion I announce the opening of my flagship restaurant Alex Dilling Café Royal in the iconic Hotel Café Royal," he wrote in an Instagram post. "This gastronomic restaurant will be one built around generosity, impeccable product and French technique."

The 34-seat dining room will be located on the first floor of the luxury hotel on London's Regent Street. It will open at an unspecified time during summer 2022 with reservations opening on 15 June. 

Dilling, who will be the executive chef of his eponymous restaurant, said Pierre Minotti, a fellow veteran of The Greenhouse and Hélène Darroze at the Connaught, had been appointed as head chef.
