Hakkasan group has announced a partnership with leading English sparkling wine producer Nyetimber for the spring-summer season at its two Michelin-starred restaurants.
A £128/$135 signature menu, created by chef Andrew Yeo, made from British ingredients blended with Cantonese cooking techniques, will be accompanied by a glass of Nyetimber Blanc de Blancs 2014. The Blanc de Blancs, made from 100% estate-grown fruit, is the iconic wine that put Nyetimber on the map.
The new ‘Hakkasan in Bloom’ menu offers fine-dining Chinese dishes with a focus on seasonality. The dimsum features wagyu beef sourced from Yorkshire, black garlic from Bedfordshire and chicken from family-run UK businesses. The main dishes are classic grilled salmon in honey, stir-fried rib eye beef and wok-seared lamb chop. The Shanghai mess for dessert is served with meringue and strawberries sourced from the British coast.
