This Award-Winning Pudding is Fit for a Queen

A Lemon Swiss Roll and Amaretti Trifle recipe has been crowned the winner of the Platinum Pudding Competition in UK held to celebrate the Queen's Jubilee.

At-home bakers across the UK were asked to create a pudding fit for The Queen. Specifically her Majesty's Platinum Jubilee.

The winner of BBC One’s The Jubilee Pudding: 70 Year’s in the Baking was revealed on 12 May, with amateur baker and copywriter, Jemma Melvin, taking out the culinary crown.

In an unanimous decision by the judges, who included Dame Mary Berry and chef Monica Galetti, her Lemon Swiss Roll and Amaretti Trifle was awarded the title of Platinum Pudding for the Queen’s Jubilee celebrations.

The 31-year-old's winning trifle consists of lemon curd Swiss roll on the bottom, St Clement’s jelly, lemon custard, amaretti biscuits, mandarin coulis, fresh whipped cream, candied peel, chocolate shards and crushed amaretti biscuits on top.

"Oh my. I have to tell my grandma first, she is the person that taught me how to bake and I am so excited to tell her, she’s going to be so proud, I can’t wait, I can’t wait", Jemma said after being informed she was the winner of the Fortnum & Mason sponsored competition.

The recipe looks set to become part of British food history, following in the footsteps of the Coronation Chicken and the Victoria Sponge.

It was described as "wowing" the judges at the first mouthful and "can be easily recreated by people at home".

Fortnum & Mason in conjunction with The Big Lunch Charity challenged the people in the UK to create a recipe fulfilling the criteria of being fit for a queen, having a memorable story, tasting just right, being perfect for home bakers and having the potential to stand the test of time.

The Patron of The Big Jubilee Lunch, The Duchess of Cornwall was a surprise special guest on the show to announce the winner. The chair of the judging panel, Dame Mary Berry said: "It’s absolutely wonderful, I think Britain is going to be so delighted and The Queen too."
