Wiston Estate in Sussex to Open Chalk Restaurant in December

The restaurant is named Chalk, after the predominant soils of the vineyards, and will be housed in an 18th century flint threshing barn, right next to the winery at North Farm in Washington, West Sussex, England, It will open on 7 December, initially for breakfast and lunch with dinner service planned for spring 2022.
Wiston Estate says its "sun-trap courtyard will be open in warmer months and make a stunning alfresco dining setting."
Chef Andrew Fellows will be manning the stoves and will serve food from local suppliers and Wiston Estate itself. "The menu will include the likes of pickled elderberries, damsons, borage, fennel, wild radishes, sea buckthorn and mugwort, all foraged from the estate," he notes. Naturally, the estate's award-winning wines will be served alongside.
