World’s most expensive restaurant returns to Dubai

Sublimotion, usually located in Ibiza’s Hard Rock Hotel, has returned for a second time to Dubai for a six-month stint until May 2023.

Sublimotion was founded by Chef Panco Roncero in 2014, and has a permanent location in Ibiza open between June and September. The restaurant is an exclusive and immersive dining experience, which Roncero created following a career running his own two-Michelin star restaurant La Terraza del Casino in Madrid. Sublimotion is regularly cited as the most expensive restaurant in the world, with just 12 seats available per sitting at a cost of AED5,000 (around £2,000) each.

Sublimotion took up a temporary residency in the Mandarin Oriental Hotel last year and has returned this month due to popular demand. The cost of a seat will allow guests to enjoy a 10-course theatrical dining performance which includes images projected into the restaurant, live music, premium drinks and an introduction to each course by Chef Roncero himself. It is also rumoured that guests may wear VR headsets to create for 3D visual effects. The menu is secret, with each course utilising touch, temperature and technology to create unique dishes and flavours.

At the Mandarin Oriental Jumeira, there will only be two performances daily at 6:30pm and 9:30pm. There are also alternative seats available for AED3,500 (£770) which include soft drinks and mocktails instead of premium drinks. The show lasts for two hours and is located in a roofless box, with a long communal table inside which seats twelve. The screens are 360-degree and display images focusing on each course’s theme across the walls – rumoured previous settings include a circus, the Orient Express and a futuristic spaceship; while the food descends from above each guest. The second residency is expected to have a different theme and experience than the previous one, which ran in Dubai until February 2022. Sublimotion has been curated by Chef Roncero, as well as his Creative Director Eduardo Gonzales, and a team of over twenty designers, actors and musicians.

At the original Sublimotion in Ibiza, the show features a soundtrack composed by the award-winning Lucas Vidal, Visual Director Curro Sanchez and magician Jorge Blass. The menu, like that of Dubai, is ‘international’ and some guests have reported that each course is from a different country, while guests’ glasses are continuously refilled with Dom Perignon, as well as vintage wine pairings with each course. Currently there is no indication as to how long the waiting list for Dubai residency is, however enquiries can be made via the Mandarin Oriental’s website and the show is also available to be booked for special occasions and celebrations.
