Serendipity3's creative director and chef Joe Calderone and corporate executive chef Frederick Schoen-Kiewert are the creators of these expensive, elevated fries. It's not the first time the iconic Upper East Side restaurant has made the headlines for its pricey menu. It also holds Guinness World Records for the most expensive milkshake, sandwich and dessert in the world.
Looking to make this at home?
Serendipity3’s chefs start by blanching Chipperbeck potatoes in Dom Perignon Champagne and J. LeBlanc French Champagne Ardenne Vinegar. The fries are then cooked three times with pure French goose fat from free-range geese. They are seasoned with truffle salt from France while shaved black summer truffles from Umbria, Italy help to perfect the flavour.
In case that’s not luxurious enough, the fries are served with a Mornay sauce made from cream, black truffle butter, Gruyere and truffled Raclette. They are then placed on a Baccarat crystal plate with sprinkles of 23k edible gold dust as a finishing touch. But would-be customers should be warned: Reuters reported there is already an eight-to ten-week waiting list for the fancy fries.
