Linn House Old Fashioned
This cocktail with Chivas Regal 12 yr from bartender Marius Willenbücher of Dino’s American Bar in Vienna isn't for the faint-hearted!

50 | ml | Chivas Regal 12 yr |
15 | ml | Haggis Essence (homemade) |
1 | bar spoon(s) | dark sugar syrup |
5 | ml | cardamom bitters (eg Fee Brothers) |
1 | splash(es) | soda water |
Method for Haggis Essence:
Sear a sheep's heart, liver and kidneys, then mix the resulting gravy with Chivas Regal 12yr for two days and chill. Remove the fat and filter several times.
Method for the cocktail:
Put all the ingredients in a chilled mixing glass and serve with a large block of ice.
