Located on the Côte Vaudoise, the family winery celebrated its 60th anniversary in 2021. La Colombe stands for Chasselas at its best, and the wines gain depth and finesse with age. Raymond Paccot is a master of terroir and has farmed biodynamically since 1999. Whether it's the mixed-set planting in the "Curzilles" vineyard, fermentation with the winery's own yeasts, or ageing in concrete eggs, the Paccots are among the region's pioneers, and with daughter Laura joining the business, the dynamic has taken another step forward.
