For Thomas Fischer the wines he makes not necessarily have to conform to the bone-dry ‘fränkisch trocken’ paradigm. In his skilled hands both Bacchus and Silvaner turn out well in medium-dry to nobly sweet styles. The medium-sweet Bacchus Kabinett, for instance, is a great example of using residual sweetness to tease out the typically spicy varietal aromas. Yet the typical finesse of the Kabinett-style is preserved. Nonetheless, our Falstaff Tip is a bone-dry wine: Fischer’s Rödelsee Schloßberg Silvaner shows its Keuper-soil typicity with herbal savour and muscle – a truly versatile and gastronomic wine.
