Hannes Sabathi yearns for the soil because from it the wine gets its unmistakable character. "This is what fascinates me, and for me, this is where the truth in wine lies", says the vintner. Or in other words, "Great soil, great wine", as Sabathi succinctly puts it. His wines always show clarity and depth, a precise soil characteristic as well as the individual tone of the vintage. You can tell that this is a vintner who not only understands his craft brilliantly, but who is also able to take a step back. With a great sense of the interplay between soil, grape variety and weather, which varies from year to year, Sabathi creates his wines. "I don't see myself as a winemaker, because I don't make wines. The soil and the vintage make the wine", he explains.

Those who act according to the principle "less is more", like Hannes Sabathi, need a lot of experience and trust in nature - and above all patience. It has always been his dream to vinify wines from different soils, because each site has a very specific geological history and mineral context that needs to be understood. Sabathi wants to let this unique character live on in the wines. To this end, he intervenes as little as possible and lets nature take its course. Whether it is wines with the salty elegance of the Kranachberg, the dense minerality of the Jägerberg, the deep substance of the Ried Loren or the cool spiciness of the Kehlberg. What they all have in common, year after year, is their distinct site characteristics - and only a soil expert like Hannes Sabathi can achieve this.
