Kai Schätzel started as a young rebel and now, at a more mature age, still carries that fire of innovative power. His wines, like “Fuchs” from the Niersteiner Hipping site in 2018 say as much. Since it is classified as a Landwein, it is not allowed to carry a site name on the label – yet what is in the glass is amongst the finest and most elaborate skin-fermented white wines Germany has ever seen. Compelling but not verging into extremes, it leaves space for nuance despite all its power. We cannot wait to see what will happen next.
