Alain Ducasse Opens Pop-Up Project in Paris

Michelin-starred chef Alain Ducasse has taken up residence at the Quai Branly-Jacques Chirac Museum in Paris. The 100-day pop up, housed in the glass walled Les Ombres by the Eiffel Tower, is described as an "ephemeral project". It is the brainchild of Ducasse, Romain Meder, his former chef at the Plaza Athénée, and Michelin-starred Spanish chef Albert Adrià. "This experimental project is conceived as a proposal for haute cuisine that is rooted in Spanish and French culture while pursuing a quest for innovation and avant-garde," ADMO said on its website.
The ADMO pop up on the roof of the museum will focus on a sustainable approach, seeking to reduce fat and sugar intake and raw materials of animal origin. A five course lunch is available for €200/US$229 or a seven course lunch or dinner menu for €380/US$435.
Tongues were wagging in Paris haute cuisine circles in September after Ducasse was replaced at the Hôtel Plaza Athénée's brasserie by unstarred chef Jean Imbert, a former Top Chef winner. Ducasse has been the most Michelin-starred chef in the world and has 18 stars currently to his name.
