When Sandro Silva moved from Brazil to Spain at the age of eleven, he probably had no idea that one day he would become one of the most well-known figures in Madrid—and beyond. Or that he would leave such a mark on the Barrio de Salamanca that locals would nickname it the “Silva district.” But that’s exactly what happened. Silva worked in restaurants across Spain, France, and Italy before opening his first establishment, El Paraguas, in Madrid in 2004. He focused on what he did best: simple dishes made with fresh ingredients, prepared with great care and passion.
