Leeks are widely used soups and stews, often as a foil to potatoes. But this vegetable, which hails from the allium family along with onions and garlic, shouldn't just be relegated to a supporting actor role. So follow the lead of the Spanish, for whom they are an essential ingredient, and give them the prominence they deserve. Try making them the star in a leek quiche or serving them with a vinaigrette and hard boiled egg.
