Tasting Notes
At the beginning of the nineties, extraction was even more intensive, with three pigeages per day; today only two are carried out per day. On the nose, truffle and hazelnut, roasted almond, cherry, herbal notes in the background, black pepper. On the palate the wine is compact and firm, with still taut but ripe tannins, immense power and tension, young, lively acidity, crunchy tannin, yet plenty of juice, and a spiciness that already integrates the first tertiary notes. Intense tactile minerality. Long!
