Was verstehen Sie darunter?<\/b><br \/>\n<b>Andreas Krainer: <\/b>Wir versuchen, die Tradition am Leben zu erhalten, das aber ohne den Staub, sondern modern in die Zeit gebracht. Und wir reduzieren und schr\u00e4nken uns sehr ein, indem wir schauen, dass wir die <strong>Produkte unserer paar Bauern<\/strong> gut auf den Teller bringen und dass wir aus dem, das es gerade gibt, etwas \u00bbGescheites\u00ab machen.<\/p>\n<p><b>Nach welchen Kriterien w\u00e4hlen Sie einen Partner aus?<\/b><br \/>\nEimal muss er etwas aushalten k\u00f6nnen und ein paar Gl\u00e4ser <a href=\"https:\/\/www.falstaff.com\/profi\/newsbeitrag\/rekordhoch-wein-treibt-wirtschaft-im-burgenland-an\/\">Wein<\/a> mit mir trinken k\u00f6nnen (lacht). F\u00fcr maximal zw\u00f6lf Personen kochen wir fast jeden Donnerstag. <strong>F\u00fcnf G\u00e4nge vom Feuer<\/strong>, die direkt neben den G\u00e4sten mit Interaktion gekocht werden.<\/p>\n<p><strong>Also auch ein wenig Erlebnisgastronomie?<\/strong><br \/>\nJa, genau.<\/p>\n<p><strong>Was glauben Sie, k\u00f6nnen wir tun, um mehr Nachwuchs f\u00fcr die Branche zu begeistern?<\/strong><br \/>\nIch wei\u00df es nicht, weil ich sieben Lehrlinge habe (lacht).<\/p>\n<p><b>Das bedeutet, Sie machen etwas richtig.<\/b><br \/>\nIch wei\u00df nat\u00fcrlich, dass es in der <a href=\"https:\/\/www.falstaff.com\/profi\/newsbeitrag\/tourismus-studie-sommersaison-2023-verspricht-der-branche-zuversicht\/\">Branche<\/a> momentan nicht so leicht ist. Wir schauen einfach, dass wir ein gutes <strong>Auskommen mit unseren Mitarbeiter:innen<\/strong> haben, eine Gaudi in der K\u00fcche haben, auch bei dem Druck, den man hat.
