Und wenn man der medialen Berichterstattung folgt, dann scheint sich dieses <strong>Verhalten in den vergangenen Jahren verst\u00e4rkt<\/strong> zu haben. Wie die <a href=\"https:\/\/www.mallorcazeitung.es\/boulevard\/food\/2023\/09\/07\/strafe-restaurants-reservierungen-91804341.html\" target=\"_blank\" rel=\"noopener\">\u00bbMallorca Zeitung\u00ab<\/a> jetzt schreibt, gehen Gastronomen auf der Balearen-Insel jetzt mit <strong>empfindlichen \u00bbNo Show\u00ab-Geb\u00fchren<\/strong> gegen <strong>Reservierungs-Schw\u00e4nzer<\/strong> vor. <strong>Bis zu 120 Euro pro Person<\/strong> werden verrechnet, wenn G\u00e4ste trotz Reservierung nicht auftauchen oder sehr kurzfristig stornieren.<\/p>\n<h2>Reservierung nur gegen Kreditkartendaten<\/h2>\n<p>Um die \u00bbNo Show\u00ab-Geb\u00fchr auch tats\u00e4chlich einbehalten zu k\u00f6nnen, verlangen viele Restaurants bei der Reservierung mittlerweile die <strong>Kreditkartendaten der G\u00e4ste<\/strong>. \u00bbEs ist ja nicht so, dass die Gastronomen die Kunden schr\u00f6pfen wollen\u00ab, wird <strong>Alfonso Robledo, Vorsitzender des Verbands der Gastronomen CAEB<\/strong>. \u00bbAber die Lokale, die bei der Reservierung die Kreditkartendaten abfragen, erreichen so, dass die G\u00e4ste die Arbeit mehr wertsch\u00e4tzen.\u00ab Etwa <strong>jedes f\u00fcnfte Restaurant auf der Insel<\/strong> wandelt laut Robledo bereits diese Praxis an. Der <strong>Vorlauf f\u00fcr eine kostenlose Stornierung<\/strong> betrage meist 24 oder 48 Stunden. Danach werden je nach Lokal <strong>20 bis 120 Euro pro Gast<\/strong> bei Nicht-Erscheinen f\u00e4llig.<\/p>\n<p>F\u00fcr Restaurantbetreiber ist es vor allem ein <strong>finanzielles \u00c4rgernis<\/strong>, wenn Reservierungen nicht wahrgenommen oder sehr kurzfristig storniert werden. Ein nicht belegter Tisch bedeutet \u2013 je nach Preisklasse des Lokals und der Anzahl der nicht erschienenen G\u00e4ste \u2013 <strong>Umsatzeinbu\u00dfen<\/strong> die im dreistelligen Bereich beginnen und auch schnell einmal die 1.000-Euro-Grenze \u00fcberspringen k\u00f6nnen. Sind Reservierungs-Schw\u00e4nzer an der Tagesordnung kommt am Ende des Jahres ein h\u00fcbsches S\u00fcmmchen zusammen, das fehlt. Als Beispiel f\u00fchrt die \u00bbMallorca Zeitung\u00ab das <strong>Restaurant \u00bb<\/strong><span style=\"font-size: 16px;\"><strong>Lume de G\u00e9nova\u00ab<\/strong> an, wo alleine im <strong>Juli und August 257 Reservierungen geplatzt<\/strong> seien.<\/span><\/p>\n<h2>Bew\u00e4hrte Methode<\/h2>\n<p>Auf Mallorca ist es vor allem die Spitzengastronomie, die auf \u00bbNo Show\u00ab-Geb\u00fchren setzt. Die <strong>Sterne-K\u00f6chin Maca de Castro<\/strong> etwa verrechnet rund 40 Prozent des durchschnittlichen Verzehrs.
