Angesichts dieser Herausforderungen t\u00fcfteln viele Gastronomen an <strong>kreativen Konzepten<\/strong>, um sich den zunehmend schwierigen Zeiten anzupassen.<\/p>\n<p>Ein Vorreiter in diesem Wandel ist der <strong>Grazer Gastronom Michael Wankerl<\/strong> \u2013 und das nicht nur kulinarisch. Seine Grazer \u00bb<a href=\"https:\/\/www.falstaff.com\/at\/restaurants\/geruechtekueche-graz\" target=\"_blank\" rel=\"noopener\">Ger\u00fcchtek\u00fcche<\/a>\u00ab hat der Koch n\u00e4mlich kontinuierlich <strong>auf eine Gem\u00fcsek\u00fcche umgestellt<\/strong>. Jetzt geht er einen Schritt weiter und bringt ein <strong>neuartiges Ticketing-System<\/strong> in seine K\u00fcche ein, <strong>inspiriert von Theater- oder Konzertbesuchen<\/strong>: G\u00e4ste sind nun dazu angehalten, im Voraus Tickets f\u00fcr den Zeitraum zu erwerben, in dem sie bei ihm essen wollen. <strong>Das \u00dcberraschungsmen\u00fc bleibt<\/strong>, aber <strong>bezahlt wird im Voraus<\/strong>, auch die Weinbegleitung kann vorab bestellt werden. Dieser Ansatz soll nicht nur der <strong>Wertsch\u00e4tzung f\u00fcr hochwertige Produkte<\/strong> und die dahinterstehende Handwerkskunst dienen, sondern verspricht auch <strong>eine erh\u00f6hte Planbarkeit f\u00fcr die G\u00e4ste<\/strong>.<\/p>\n<h2>Wie in London oder New York<\/h2>\n<p>Die Einf\u00fchrung dieses <strong>Prepaid-Ticketingsystems<\/strong> folgt dem Beispiel des US-Gastronoms <a href=\"https:\/\/en.wikipedia.org\/wiki\/Nick_Kokonas\" target=\"_blank\" rel=\"noopener\">Nick Kokonas<\/a>, der bereits 2015 erfolgreich dieses Konzept etablierte, als er sich 2015 \u00fcber ein <strong>Minus von umgerechnet 200.000 Euro<\/strong> aufgrund von No-Shows \u00e4rgern musste.<\/p>\n<p>Ob London, Paris oder New York, \u00fcberall werde das nun schon so gehandhabt, meint Wankerl und ist sich sicher, dass auch G\u00e4ste hierzulande das Ticketing positiv aufnehmen werden.
