Diesen Ansatz kennt man aus seinem mittlerweile zum Standardwerk (und einer TV-Serie) gewordenen Werk <a href=\"https:\/\/papier-buch-haas.buchkatalog.at\/das-kulinarische-erbe-der-alpen-9783038007357\">\u00bbDas kulinarische Erbe der Alpen\u00ab<\/a>. Diesmal bleibt der Autor in der <strong>Schweiz<\/strong> und widmet sich mit Hingabe einer Spezial-Disziplin der <strong>eidgen\u00f6ssischen Genusskultur.<\/strong><\/p>\n<p class=\"p1\">Wie Belgien ist auch die kleine Schweiz \u2013 fernab der Kakao-Anbaul\u00e4nder \u2013 zum <strong>Synonym f\u00fcr Schokolade<\/strong> geworden: 70\u2009% der Produktion gehen in den weltweiten Export. Die ganzseitigen, nostalgischen Bilder dazu, viele auch von l\u00e4ngst verschwundenen Produkten, sind die eine Seite. Viel spannender f\u00e4llt aber die <strong>Ursachenforschung<\/strong> aus, warum die Alpenrepublik zu einem \u00bbglobal player\u00ab werden konnte. Dass es bis auf C\u00e9sar Ritz Ausl\u00e4nder waren, die aus dem Milch\u00fcberschuss eine <strong>neue Industrie aufbauten,<\/strong> ist ein interessantes Detail: Heinrich Nestl\u00e9 kam aus Frankfurt, Charles und George Page<br \/>\ngar aus Amerika.<\/p>\n<p class=\"p1\">Flammer beleuchtet aber auch, wie sehr <strong>importierte Schokolade<\/strong> den Chocolatiers (mit ihren Kilopreisen von 15,80 Franken) am Heim-Markt zusetzt.
