Au\u00dferdem wurden Silberbesteckteile und Steakmesser f\u00fcr <strong>10.000 Euro<\/strong> angeschafft. Die Gerichte werden auf individueller, handgemachter Keramik arrangiert. Zum Bestand geh\u00f6ren <strong>600<\/strong> Teller f\u00fcr durchschnittlich <strong>50 Euro<\/strong>.<\/p>\n<p class=\"p2\">F\u00fcr die Pflege des Equipments werden <strong>w\u00f6chentlich 15 bis 20 Arbeitsstunden<\/strong> (silbern, polieren) eingeplant. Geht etwas zu Bruch, wird nachgekauft. Die j\u00e4hrlichen Kosten liegen daf\u00fcr gerne im vierstelligen Bereich. Der Weinkeller hat 500 Positionen, der Wert und somit das gebundene Kapital belaufen sich auf <strong>180.000 Euro<\/strong>.<\/p>\n<p class=\"p2\">In der K\u00fcche wird mit moderner Technik gearbeitet, wie Fleischreifeschr\u00e4nke, Paco-Jet, Thermomix oder D\u00f6rrautomaten: <strong>25.000 Euro<\/strong>. So auch in diesem Fall. Wegen der hohen Spezialisierung der Angestellten ist Urlaub nur mit einer Schlie\u00dfung des Lokals umsetzbar. Dazu kommt ein <strong>Wareneinsatz von 25 bis 30\u2009%<\/strong>.<\/p>\n<h2>Was bleibt \u00fcbrig?<\/h2>\n<p class=\"p2\">Das alles dr\u00fcckt die Gewinnmarge des Lokals in den <strong>einstelligen Prozentbereich<\/strong>. Und das auch nur, wenn <strong>alle Pl\u00e4tze<\/strong> im Restaurant tats\u00e4chlich <strong>belegt<\/strong> sind.
