Blackberry Rosemary Sparkler

blackberries, plus 12-15 berries as garnish

Champagne, Crémant or sparkling wine
  • Bring blackberries, water and sugar to a boil in a saucepan. Continue to simmer at a low temperature for ten minutes until the berries are soft and a pink cordial is formed. Remove the saucepan from the heat, strain the cordial through a fine sieve and allow to cool.
  • Fill the flute glasses with 30 ml of cordial each and add 3 blackberries per glass.
  • Top up each glass with sparkling wine and garnish each cocktail with a sprig of rosemary.
