Italian Classic: Strangolapreti

Strangolapreti is a traditional Italian gnocchi made with budget-friendly bread and spinach.

Ingredients
1 kg stale white bread
500 g spinach
2 eggs
100 g parmesan cheese
100 g butter
olive oil
500 ml milk
salt
pepper
  • Cut the bread into cubes and soak in lukewarm milk for 3 hours.
  • Steam the spinach for around 2 minutes, chop and toss lightly in butter and season with salt, pepper and nutmeg.
  • Add the grated parmesan cheese, eggs, salt and bread. Mix everything well with a wooden spoon and, if the mixture is too thin, add some breadcrumbs. 
  • Shape the mix into the desired form (balls, spoon shape or gnocchi-like) and place in boiling salted water for around 5-7 minutes
  • When the dumplings float to the surface, take them out of the pan with a slotted spoon.
  • Serve with plenty of parmesan cheese and foaming hot butter that has been infused with sage.
