From Thursday, March 30, restaurant Paradise in Soho, London, will introduce ‘Paradise: After Dark’, the new late-night concept: after evening dinner service has ended, from 10pm, Thursday to Saturday, the restaurant will morph into an intimate bar. Head Bartender Erin Mulkerrin-English will be serving up Sri Lankan-inspired classic cocktails. Together with the restaurant’s chefs, he has created a selection of zero-waste drinks, such as a pol-roti old fashioned and a smokey clarified bloody mary, using leftover ingredients from the kitchen.
