Aristocratic and popular. Veneto's cuisine plays between these contrasts, as varied as the landscape changes from Lake Garda to Cadore and the Adriatic Sea. Regional gastronomy is an imaginative mixture of different experiences. From the Venetian tradition, which is characterized by Levantine, Byzantine and Jewish influences, to that of Belluno with its alpine character, to that of Vicenza with its rustic elements such as torresani allo spiedo (wild pigeons on a spit). In short, the dishes differ from province to province, but have one common denominator: the freshness and authenticity of the ingredients. It was precisely this richness that prompted us to embark on another journey of taste and research this year. We discovered traditional as well as modern and avant-garde restaurants, united in their efforts to offer memorable flavors and true hospitality. Le Calandre, the Alajmo family's gourmet restaurant, is once again at the top of our list this year, where authentic moments of full enjoyment and excellence offer visitors a true feast. But we also welcome new openings such as the traditional 12 Apostoli in Verona, where Giancarlo Perbellini is returning to a place where he once learned his masterful craft. So there is a lot to discover in this deep taste of the Veneto. Buon Appetito!
