A deep truffle jus lends the Parmesan-crusted veal sweetbreads additional aromatic brilliance. The French Burgundy duck is imaginatively presented with spicy nduja cream, pickled Tropea onions, black garlic, nashi pear and refreshing orange jus. Excellent!
