Designed by the architecture firm Snøhetta, the Under gourmet restaurant is five and a half meters below the sea's surface. From the outside, the plain concrete building looks like a tunnel; inside, a huge wall of glass serves as a window to the underwater world. Green lighting reinforces the surreal impression of dining in the depths. Chef Nicolai Ellitsgaard Pedersen insists on regional, organic ingredients for the 18-course menu that has earned him a Michelin star.
