Pasta al forno with cherry tomatoes, ricotta and peas

Okay, this pasta is only baked very briefly for gratinating - but that's exactly what makes it so irresistible!

Ingredients (4 servings)
3 tablespoon(s) Olive oil
4 Garlic cloves, cut into slices
0.5 teaspoon(s) Dried chili flakes (optional)
800 g Canned cherry tomatoes (or peeled plum tomatoes)
350 g Short pasta (such as rigatoni, fusilli or penne)
250 g Ricotta
125 ml Whipped cream
Zest of 1 lemon
Nutmeg, grated
1 handful Basil, leaves plucked and torn
120 g Peas, defrosted
60 g Parmesan cheese
Salt
Black pepper, freshly ground
  • Preheat the oven to 220 °C grill setting and bring a large pan of salted water to the boil. Heat the oil in a large pan over a medium heat and fry the garlic and chili flakes for 30 seconds. Add the tomatoes, rinse the tins with a little water and add this too. Season well with salt and pepper and simmer for 15 minutes to thicken the liquid a little. When the water is boiling, stir in the pasta and cook for 2 minutes less than indicated on the packet. In the meantime, mix the ricotta, whipped cream, lemon zest and grated nutmeg in a bowl and season with salt and pepper.
  • Season the tomato sauce to taste, then drain the pasta and stir into the sauce along with the basil and peas. Stir until everything is well mixed. Spread half of the pasta mixture on the bottom of a medium-sized casserole dish, then spread half of the ricotta mixture on top. Top with the rest of the pasta mixture, then spoon over the rest of the ricotta mixture.
  • Sprinkle with the grated Parmesan and place under the hot grill for 8 to 10 minutes until the surface is golden and the edges are bubbling.
