Ingredients (9 servings)
250 g Whole wheat flour
200 g Wheat flour type 405, plus a bit more for processing
50 g Oats, plus a bit extra for sprinkling
1 teaspoon(s) Baking soda
4 twigs Rosemary
1 Large egg
300 ml Buttermilk or yogurt
100 g Red Leicester or Cheddar cheese
  • Take a large bowl and mix  both flours, the oats, baking soda and 1 level teaspoon of sea salt. Pluck the rosemary, finely chop most of it and mix in, putting the rest aside for later.
  • Make a dent in the middle of the pile of flour, then beat the egg and pour it into the indentation along with the buttermilk. Mix well with a fork. Gradually work the flour from the edge inward and knead everything into a dough with clean, lightly floured hands.
  • Cut the cheese into cubes and mix into the dough. Then shape the dough into a lump and, with oiled hands, spread out about 3 cm thick. Sprinkle some extra oats and a little sea salt over the dough and press them gently in. Cut a deep cross into the dough, place it carefully in your Air Fryer's drawer and bake for 20 minutes at 180 °C.
  • Rub the remaining rosemary with 1 teaspoon of olive oil, sprinkle over the bread and bake for another 10 minutes at 180°C until a firm, golden brown crust has formed and the bread sounds hollow when tapped on the bottom.
  • Leave the soda bread on a rack to cool. Serve warm.
