Self Description

At the Southernmost part of Norway, where the North Atlantic meets the rugged coastline of Lindesnes, a concrete monolith rests half in and half out of the sea. Under was born from a dream: to build a bridge between the ocean and humanity — not only as an architectural statement, but as a place where nature, culture and gastronomy meet.
From the beginning, our vision was simple. The world’s best ingredients are found right outside our door. The sea, the fjords, the forests and the surrounding farmland provide us with everything we need. Under was created to celebrate this region — and to give our guests a deeper sense of connection to it.

Building a restaurant partially submerged in the ocean was a technical challenge. But just as important was our ambition to make it a project rooted in the local community. We worked closely with local contractors, fishermen and suppliers. The result is not only a destination restaurant, but a shared achievement that has placed Lindesnes on the global map.
The architecture, designed by Snøhetta, gives guests the feeling of being part of the sea itself. As you descend below the surface and sit in front of the panoramic window, the shifting light and marine life outside become part of the experience. The interior, developed with Hamran, adds warmth through the extensive use of local oak — from floors and ceilings to furniture and details — grounding the space in Norwegian craftsmanship.

Dining at Under is a sensory journey. Our seasonal tasting menu is built on purity, simplicity and respect for each ingredient. We collaborate with local fishermen, farmers and foragers, combining traditional knowledge with modern techniques. The food belongs here — inspired by the ocean’s textures, colors and rhythms.

Being underwater changes perspective. When guests observe the marine life up close, sustainability becomes personal. The ocean is no longer abstract — it is present, alive and fragile. For us, sustainability is about both environment and people: protecting nature while creating local value and knowledge.

Our hope is that Under will be remembered not only as a spectacular restaurant beneath the sea, but as proof that small coastal communities can create world-class experiences — deeply rooted, forward-looking and in harmony with nature.
