Tasting Notes
A vivid nose of raw, sweet, buttery shortcrust pastry that is flecked with lemon zest: rich and very delicate at the same time, yet with a streak of saltiness and just the merest touch of candlewax. The palate is concentrated, lovely and utterly slender in stature, absolutely toned, linear. Fine mousse accentuates this. There is wonderful, cool, chalky depth that lends vertical dimension. The finish is drier than the 6g/l dosage suggests and that lovely, rounded nuance of molten wax reappears gently on the salty finish. A beautifully fresh, subtle wine that will evolve beautifully – if you can wait that long.
