Earl Grey Tea-Time Cocktail
Infusions are spirits that have been flavoured over a long period of time – with tea, herbs and fruits soaked in alcohol.

| Earl Grey Tea | ||
| 40 | ml | Hendrick's Earl Grey Liqueur |
| 30 | ml | Yuzu Sake |
| 10 | ml | Yuzu juice |
| 2 | pinch(es) | Peychaud's Bitters |
| icing sugar | ||

- Heat up the gin and steep with Earl Grey tea for six minutes. Always taste during this time, as the gin can become bitter.
- Add icing sugar (5-10 tablespoons per litre) and lime zest. After 30 minutes, remove zest.
- Shake ingredients vigorously with ice briefly, strain into a tea cup and garnish with a lime twist and mint.
