This is forbiddingly simple – and any modifications to this simplicity actually only detract. The most important thing is to have a sharp, salty blue cheese.

Ingredients
250 g sharp blue cheese
400 -500 g full fat Greek yoghurt
  • Whizz in a blender until smooth and runny.
  • Adjust for seasoning with salt (if necessary).
  • Serve over iceberg lettuce wedges for an American classic.
  • Toasted pumpkin seeds make it special, along with crispy, smoked bacon or candied walnuts.
