Skate in sweet and sour vegetables

A creative encounter: skate meets sweet and sour vegetables.

Ingredients Agrodolce

Ingredients (4 servings)
500 g Peppers, halved and seeded
35 g Red peppers, mild, deseeded, cut into thin rings
16 g Basil
16 g Parsley
1 bunch Spring onions
100 g Pickled capers, drained
40 g Tomato Purée
140 g Green olives in olive oil
25 g Fresh mint
30 g Honey
350 g Peeled carrots
200 g Celery stalks
200 ml Lemon juice
100 ml Red wine vinegar (6% acidity)
3 cloves Garlic, chopped
80 ml Olive oil for frying
50 ml Olive oil for finishing

Skate ingredients

Ingredients (4 servings)
1 kg Skate wings, cleaned by the fishmonger
Flour
Olive oil
Salt
Pepper

Preparation Agrodolce

  • Cut all the vegetables into strips ½ centimeter wide and around 3 to 4 centimeters long. First brown the spring onion bulbs, garlic and capers in olive oil. Add the remaining vegetables and sauté.
  • After 4 minutes, add the olives and cook for a further 6 minutes, then mix in the tomato puree and honey. Remove from the heat, roughly chop the herbs and fold in as you would a salad. Season with the red wine vinegar and olive oil; add the lemon juice at the very end and leave to rest.

Preparation of skate

  • Cut the skate wings into appetizing pieces, flour and fry in very hot olive oil; season with salt and pepper and place in a 90 °C oven for 15 minutes.
  • Arrange the pieces of skate on a serving platter and arrange the sweet and sour vegetables on top. Leave to rest for 10 minutes and serve.
  • The dish can also be prepared the day before and served slightly reheated; the taste gets even better overnight!
