Tortang Talong: Philippine-style eggplant omelette

Soft, creamy eggplants filled with spicy minced meat, dipped in egg and fried until crispy - that's tortang talong, a culinary revelation from the Philippines! Masarap!

Ingredients (4 servings)
4 Small eggplants, approx. 700 g
30 ml Vegetable oil (+ 175 ml for frying)
1 medium-sized clove of garlic, finely chopped
1 small yellow onion, finely chopped
1 teaspoon(s) Ginger, finely chopped
200 g Minced meat, mixed
2 tablespoon(s) Oyster sauce
1 tablespoon(s) Fish sauce
1 tablespoon(s) Soy sauce
5 Large eggs
1 Chili pepper
1 Lime or Calamansi
Black pepper, freshly ground
Salt
White rice, cooked, to serve
Ketchup or banana ketchup to serve
Fresh herbs such as coriander, mint and chives to garnish
  • Preheat the oven on grill setting and roast the eggplants on all sides until the skin is charred and the fruit is soft. Leave to cool, then peel off the skin. It doesn't matter if small parts are left behind here and there. Season with pepper and salt, flatten the eggplants slightly with a fork, but leave the stalk on.
  • Meanwhile, sauté the garlic, onions and ginger in a pan with oil. Add the minced meat and fry. Season to taste with the sauces, reduce and leave to cool. Beat three eggs, add to mixture and mix well.
  • Beat the remaining eggs and season. Turn the eggplants in the eggs, then slide them into a hot pan with oil. Fry over medium heat until golden brown, carefully heaping the meat on top of the eggplants. Turn carefully and press flat, continue to fry slowly until the other side is also golden brown. Drain on paper towels and serve with rice, ketchup, chopped chili, lime and fresh herbs.
