When Fumiko Tokuoka from Osaka took over the Biffar winery in 2013, she already had ten years of oenological research in Geisenheim and several years of Palatinate experience behind her. Her favored winemaking method, which consistently relies on yeast maturation - at least 15 months for wine and 5 years for sparkling wine - is not aimed at quick effects, but at longevity. Something similar can be said about the winery: we are only seeing the beginning here. And this leaves no doubt that the old name Biffar will soon shine brighter than ever before. Associated: the "Fumi" restaurant.
