Tasting Notes
Golden with green reflections. Nougat de Montélimar, candied peach, cassata, plus savoury undertones: mint and cardamom. Opens with texture and creaminess, unfolds to a large but not massive volume, remains fine and sophisticated in its extract filling, clearly mineral and thus downright inviting to chew. Quite seamlessly merged with the body acidity, an opulence without heaviness. Ideal food companion when you have the right thing, truffled sweetbreads for example. Still clearly on the rise.
