The savouriness of the nose is immediate: the autolysis carries the slight pepperiness of freshly baked sourdough rye crumb, followed by a hint of ripe Golden Delicious apple with overtones of white miso. The palate falls into step, presenting a rich canvas of creamy, textured autolysis that also shimmers with that lovely saltiness, a touch of butter and more white pepper. The foam is fine and persistent and all of this savoury richness is countered by a taut spring of lively, mouth-watering English acidity. A bold and most gastronomic wine of deep savouriness that will also evolve beautifully.
