Der Anfang März handverlesene und sehr sanft gepresste Saft wurde in 60 % rostfreien EdelstahlTanks und 40 % alten französischen Eichenfässern vergoren. Nach der Gärung durchlief dieser Wein eine 100%ige malolaktische Gärung und wurde 7 Monate lang auf der Hefe gelagert, was dazu beiträgt, die Balance zwischen Säuregehalt und einer subtilen, feinen Cremigkeit am Gaumen zu erreichen. Der Wein wurde verschnitten, dann einer Tirage (Zugabe von Zucker und Hefe) unterzogen und im Oktober 2017 zur zweiten Gärung in Flaschen abgefüllt. Dieser Blanc de Blancs ist anschließend 3 Jahre lang auf der Hefe in der Flasche gereift und wurde im Dezember 2020 degorgiert. Zarte Aromen von zerstoßenen Braeburn-Äpfeln führen zu einem nuancenreichen Hintergrund von Brioche und sanft gerösteten Mandeln. Am Gaumen präsentiert er sich knackig und frisch, mit einem schönen Gleichgewicht zwischen dem festen Säurerückgrat und der hefebedingten Cremigkeit. Yeast and brioche, a fine autolysis savouriness on the nose. There is also a hint of vanilla. On the palate, the wine combines a fine mousse with lively acidity and a powerful body, the mineral play reinforces the impressions of freshness and elegance despite all the body, a pleasant accompaniment to food and a top-class aperitif.
