Bright, flinty straw yellow with light green notes and a delicate mousse. On the nose plenty of fresh yeast and pastry, with a little apple. The palate is substantial in approach and course, opening with notes of apple and lemon, before leading to a salty, finely meshed mousse which lingers long.
