Apple peel, yeast, and something inorganic: iron, rust, rainwater on wet limestone. An extremely fine mousse, a polished yet dynamic palate with plump fresh fruit and a firm yet elegant acid backbone. A hint of extract sweetness in the transition to the finish. Multilayered, and still has ageing potential.
