Bollinger Appoints Émilien Boutillat as New Cellar Master

The Champagne house Bollinger has announced the appointment of Émilien Boutillat as its new Cellar Master. From 1 October 2026, he will be responsible for the Bollinger style and will guide the house through its next phase of development as it approaches its 200th anniversary.

International Experience

A native of the Champagne region, Boutillat studied oenology and agricultural engineering at Montpellier SupAgro. In France, he worked at Château Margaux and Domaine de la Solitude in Châteauneuf-du-Pape before gaining international experience at Mud House Winery in New Zealand, Peter Michael Winery in California, Viu Manent in Chile and La Motte Wine Estate in South Africa.

Since 2018, the 39-year-old has served as Chief Winemaker at Champagne Piper-Heidsieck, where, upon taking up the position, he became the youngest winemaker among all major Champagne houses.
