Tasting Notes
Day 1: Golden yellow in the glass. Ripe mirabelle plums and vineyard peach on the nose. Floral, reminiscent of orange blossom. Slightly nutty, delicately smoky. Warm and full-bodied on the palate with a vibrant acidity structure. A large mineral note on the palate, it develops into a lining of pome fruit on the finish. Long, animating and fresh. Day 2: Marginal change in the nose. Smoky, more flinty. Yellow fruit appears somewhat riper. An ethereal saline note is added. Very similar to the nose on the palate. Somewhat riper fruit, making it fuller, rounder and more accessible. Mineral tension diminishes somewhat. Day 3: The nose is even more integrated and harmonious. Ripe yellow mirabelle plums in combination with a delicate smoky component. Peach and salted lemon. Seems more open. Even more accessible on the palate than yesterday. Does not lose tension and pressure. Appears more substantial. Tighter phenolic reverberation.
