Citrus Dressing

Finely grated zest and juice of a sharp citrus such as lemon, lime, bergamot or Meyer lemon adds a zing to this salad dressing.

Ingredients
1 can anchovies in oil
raw garlic cloves (to taste)
50-70 ml extra virgin olive oil
1 citrus fruit, zest & juice (large lemon, Meyer lemon or Bergamot)
  • Whizz all ingredients in a blender, including the oil from the anchovies, until smooth. Adjust for seasoning.
  • This is a dressing with robust, adult flavours which needs lettuces that can stand up to it. The sturdy leaves of chicory or any members of the radicchio family with their delicious bitterness Verona, Chioggia etc. work perfectly.
