Mango & Cucumber Salad with Rosemary

Making this salad is not exactly quick, as there is a lot of chopping, however if you try it once, you will want to make it again and again. It tastes indecently good!

Ingredients (4 servings)
2 ripe mangoes, peeled and cut into cubes
1/2 small red onion, finely diced
3 mini cucumbers, diced
1 red chilli, seeded and finely chopped
juice of half a lemon
1 tablespoon(s) fish sauce
1 tablespoon(s) fresh rosemary, finely chopped
1 pinch(es) sugar
  • Mix all the ingredients together and leave to infuse briefly.
  • Goes well with grilled fish, for example sea bass or angler fish, as well as grilled chicken.
