Oysters with Fresh Passion Fruit and Chilli

Ingredients (Serves 2)

ripe passion fruit
1
fresh turmeric rhizome

dash
fish sauce

tablespoon
olive oil

Thai chilli, red

chives

crushed ice
- Cut the passion fruit lengthwise. Mix half of the pulp with some finely grated fresh turmeric and strain through a sieve to remove the seeds.
- Season with a dash of fish sauce and whip with the olive oil to a creamy emulsion. Carefully open the oysters, drain the water.
- Place on a serving plate with crushed ice, drizzle a little of the emulsion on each oyster and garnish with a slice of chilli and some chives.
- Put the other passion fruit half in the middle of the oysters, cut lime into eight pieces, arrange them on the plate and enjoy immediately!
