Kadeau
Most of what is served at the two-star restaurant Kadeau comes from Bornholm, the home island of host and head chef Nicolai Nørregaard. During the colder months, the kitchen follows old Scandinavian traditions, using a variety of pickled, smoked, and fermented ingredients, along with natural preservation methods.

Aamanns 1921
Adam Aamann revived the long-standing tradition of smørrebrød when he opened his first restaurant in 2006, focusing on seasonal and organic vegetables, locally and sustainably sourced fish, ethically raised meat, and high-quality whole grain and sourdough bread. These open-faced sandwiches are true works of art, with their often highly creative toppings changing with the seasons.

Schønnemann
Founded in 1877, Schønnemann is something of the grand old dame of Danish smørrebrød culture. A visit to this iconic eatery, known for its vast selection of open-faced sandwiches, is a must on any trip to Copenhagen. Some sandwiches are even named after celebrity chefs who have specially created them for Schønnemann. Open for lunch only.

Koan
In spring 2023, Kristian Baumann opened his restaurant in a former warehouse right by the sea – and just months later, the Michelin Guide awarded it two stars.
