Asian Fish Balls

A quick recipe to conjure up an enticing dish from leftovers.

For the fish balls:

Ingredients
250 g fish scraps, such as salmon or trout, (check for bones, scales then shredded)
250 g mashed potatoes (from the day before)
2 spring onions, finely chopped
1/2 bunch coriander, finely chopped
1 egg
1 chilli, finely chopped
salt
pepper

In addition:

Ingredients
breadcrumbs or panko flour (Asian breadcrumbs)
oil for deep frying
1 organic lemon
soy sauce
some lightly toasted sesame seeds
  • For the fish balls, mix all the ingredients (fish scraps, potato, spring onions, coriander, egg and chilli) together and season the mixture with salt, pepper and chilli (according to taste).
  • Form small balls and cover them in the breadcrumbs or the panko flour. Fry immediately in oil.
  • Add the roasted sesame seeds to the soy sauce and serve with fish balls adding a lemon wedge.
