MARINATED CHICKEN SKEWERS WITH ALMDUDLER

FOR THE CHICKEN SKEWERS

Ingredients (4 servings)
800 g chicken fillet
2 teaspoon(s) Almdudler syrup
Soy sauce
Salt
Coconut oil

FOR THE VEGETABLES

Ingredients (4 servings)
2 zucchinis
2 red bell peppers
8 spring onions
Fresh garlic
1 lime/lemon
4 sage leaves
2 chili peppers
Pepper
Olive oil
Salt
Aluminum foil

Preparation

  • Quarter the zucchinis and remove the seeds. Remove the stem and seeds from the bell peppers, clean and quarter the spring onions. Dice the bell peppers and slice the zucchinis into approximately 5 mm thick slices, then place the vegetables in a bowl. Cut the lime/lemon into thin slices, then quarter them. Slice the garlic and add it to the bowl along with olive oil, salt, and lemon pepper. Tear off 4 pieces of aluminum foil, each measuring 60 cm, halve them, and distribute the vegetables onto them. Halve the chili peppers and place half of a chili pepper and a sage leaf on each portion. Close the foil and place it on the grill's embers. If using a gas grill, heat the second chamber to approximately 160 degrees Celsius. Cook for 20 minutes at 160 degrees Celsius.
  • Cut the chicken fillets into equal-sized pieces and skewer them. Grill the skewers briefly on both sides and set them aside. Heat a pan on the grill, add some coconut oil, place the skewers in the pan, add Almdudler syrup, let it caramelize, and deglaze with soy sauce. Let the skewers sit for a few minutes.
