The Parellada is one of the oldest varieties in Spain and was widespread in the Aragon area in the 14th century. Today it has its most important plantings in Penedès, as it is a main ingredient in the cuvée of the sparkling wine Cava. Since there are also legally permitted regions for the production of cava outside of Penedès, there are also numerous plantations in central Spain. It reaches its best in higher-altitude vineyards in the Penedés, where it can mature for a long time and only reaches full maturity late. It retains a good acid structure, an essential prerequisite for the production of top sparkling wines. Particular susceptibility is only known with regard to downy mildew. In addition to Penedès, Parellada is also one of the dominant grape varieties in the Costers del Segre, Conca de Barberà and Tarragona regions. Some producers also make still wines from the Parellada, the most famous of which is Miguel Torres with his popular Vina Sol. Parellada is almost unheard of outside of Spain.
